本文给出一个测量食品材料导热系数与导温系数的方法。用一个加热的探针和一个热电偶探针。同时插入要测物质的内部,根据加热的功率及热电偶测得的温升值,即可计算物质的导热系数与导温系数,这种方法快速方便,适用于现场测试。与公认两种较准确的方法实测比较,偏差在±2%左右,在二种较准确方法误差范围之内,所以结果是令人满意的。
