目的了解幼儿园食堂实施量化分级管理的效果及存在的问题,为进一步加强幼儿园食堂管理提供依据。方法结合幼儿园食堂本身的特点,将适用于普通餐饮业的量化评分表在一些指标上进行调整。分别于2006年和2010年对铜陵市22家幼儿园食堂进行量化分级管理并进行效果分析。结果实施量化分级管理后,各幼儿园食堂食品安全管理水平不断提高,A,B级单位构成比分别由2006年的18.2%,27.3%上升到2010年的35.0%,30.0%;C级单位构成比由54.5%下降到35.0%。4 a来,卫生许可得分率有所提高,主要体现在C,B级上,而A级变化不大。经常性卫生监督得分率变化不大。结论量化分级管理的实施,有效地提高了幼儿园食堂食品安全现状,监管部门要加强食堂管理人员的培训,促进管理模式的精细化。
Objective To understand the effects and problems of quantitative and hierarchical management of kindergarten canteens and provide the basis for further strengthening the management of canteens in kindergartens. Methods According to the characteristics of kindergarten canteen itself, the quantitative rating scale which is suitable for general restaurant industry is adjusted on some indexes. In 2006 and 2010 respectively, Tongling 22 kindergartens canteen quantitative management and effectiveness analysis. Results After the implementation of quantitative and hierarchical management, the food safety management level of all kindergartens canteens continued to increase. The unit proportions of Class A and Class B units increased from 18.2% and 27.3% in 2006 to 35.0% and 30.0% respectively in 2010; the C-unit unit ratio From 54.5% to 35.0%. 4 a, health permit score increased, mainly in the C, B level, while the A level changed little. The rate of regular health supervision has little change. Conclusion The implementation of quantitative management grading effectively raised the status quo of food safety in kindergartens and canteens, and the regulatory authorities should strengthen the training of canteen managers and promote the refinement of management models.
