水果和蔬菜中含有的有机酸,称之为果酸,果实中主要的有机酸有柠檬酸、酒石酸、苹果酸,以及有少量的醋酸、琥珀酸等。以上这些酸也广泛存在于各种饮料中。对于果酸的定量有气相色谱法、滴定法、比色法、光度法等。气相色谱法需要衍生后再进行分析,唯有HPLC定性,定量有其独特性。本文用反相高压液相色谱研究了果酸的分离、找到了用紫外检测器与示差检测器同时检测,分离六种果酸的最佳条件,紫外检测为入214nm,示差检测为8x。在一定浓度
