葵,一般人都称“冬寒菜”。据《诗经》中载,“葵”、“韭”、“瓜”、“壶(瓠)”四种最早的蔬菜中,葵列其首。随着新蔬菜品种的不断涌现,葵本身的食用价值不断下降,渐渐失宠。改革开放以后,国人生活水平大大地提高,人们在吃腻了大鱼大肉之后,转而食“古”、食“粗”、食“野”。昔日不可能在宾馆饭店里出现的冬寒菜,如今也堂堂正正地步入高档食府。
