麻辣油茄具有湘菜风味,颇受消费者喜爱。现将加工麻辣油茄的方法简介如下。选料:选取鲜嫩肉厚的秋茄,备红辣椒、姜丝、豆豉和食盐等作辅料。清洗:清洗茄果。蒸煮:用蒸汽蒸煮,杀死茄肉中的活细胞和生物酶,防止氧化褐变,煮到茄子变软变色但未全部烂透时即可。
