本研究采用多种浓度的乙醇溶液分别对香蕉不同后熟度果皮和果肉中可溶性糖进行提取,并利用检测试剂盒对提取的可溶性糖进行含量测定,以期探索适合不同成熟度香蕉果皮和果肉中可溶性糖的最佳提取方法,同时揭示采后香蕉果实可溶性糖含量随时间的变化规律。试验结果表明,本研究成功建立了不同成熟度香蕉果皮、果肉中可溶性糖的最佳提取方法,同时还发现香蕉果实后熟过程中果肉中葡萄糖含量变化呈现先升后降的趋势,果皮中可溶性糖含量仅呈现出上升的趋势。
In this study, we used various concentrations of ethanol solution to extract soluble sugar in the peel and pulp of different ripeness of banana, and determined the content of soluble sugar by using the test kit, in order to explore suitable for different maturity banana peel and pulp The optimum extraction method of soluble sugar, and reveal the law of soluble sugar content of postharvest banana fruit with time. The results showed that the best method to extract soluble sugars from banana peel and pulp was successfully established in this study. The changes of glucose content in banana fruits at first and then decreased after ripening were also observed. The soluble Sugar content showed only a rising trend.
