甘油二酯是普遍存在于各种食用油中的天然微量成分,因其具有抑制体重增加、减少内脏脂肪和降低血脂的功能而日益受到人们关注,同时不同纯度的甘油二酯作为一种多功能的添加剂被广泛应用于食品、医药和化妆品等行业中。因此甘油二酯的制备及其定量检测非常重要。在甘油二酯定量检测中,高效液相色谱技术是最常用的技术之一。主要对甘油二酯的制备方法及高效液相色谱技术在其检测中的应用进行了综述,比较了不同制备方法的优缺点,并对甘油二酯的制备方法和高效液相色谱技术在其定量检测方面的发展前景进行了展望。
