变形杆菌早在1887年就被記載为食物中毒病原体之一,由变形杆菌污染食物引起的中毒,在国外很早就有报告,国內乔树民1956年首次报告变形杆菌食物中毒。近年来,变形杆菌食物中毒日趋多見,在細菌性食物中毒中占着較大的比重,現将近年来国內有关文献資料择要整理如下,以供同道参考。細菌特性及分布一、細菌特性:变形杆菌系革兰氏阴性无芽胞杆菌,具有腸道杆菌的一般特性,其抗原結构有O及H两种,根据Rustigian和Stuart分成普通变形杆菌、奇異氏变形杆菌、莫根氏变形杆菌和雷极氏变形杆菌,其生化反应如表1。
