广西壮药薏苡茎色素的理化性质研究

以广西壮药薏苡茎为材料,对薏苡茎色素的理化性质进行研究,为生产各种食用品、化妆品、医药药品等色素新产品提供重要原料。提取薏苡茎色素的最佳工艺条件为:以水作提取剂,室温下煮沸2h,料液比为1∶50(g/mL)。用紫外分析法研究色素稳定性。结果表明:色素在330nm处有最大吸收峰,色素水溶性较好,pH值对色素的稳定性影响较大,但热稳定性良好。防腐剂、淀粉对色素的稳定性无不良影响,耐光性较差。氧化剂、还原剂中除抗坏血酸对色素的影响明显外,其他均无明显影响。除Fe3+外,金属离子对其影响较小。 With Zhuang Yao Guangxi Coix stem as material, the physical and chemical properties of coix stem pigment were studied, which provided important raw materials for the production of new pigment products such as food, cosmetics, pharmaceuticals and medicines. The optimal conditions for the extraction of coix stem pigment were as follows: water as extractant, boiling at room temperature for 2h, the ratio of material to liquid was 1:50 (g / mL). Pigment stability was studied by UV analysis. The results showed that the pigment had the maximum absorption peak at 330nm, the color water solubility was better, and the pH value had greater influence on the pigment stability, but the thermal stability was good. Preservatives, starch, no adverse effects on the stability of the pigment, poor light resistance. Oxidants, reducing agents in addition to ascorbic acid significantly affected the pigment, the other had no significant effect. In addition to Fe3 +, metal ions have little effect on it.
