Calcium alginate capsule is a complex network composed of macromolecules, water molecules and ions, and its moisture content is high (about 35% by dry basis). In the calcium alginate capsules drying process, using conventional analytical methods to determine the drying mechanism and the hardening reaction of the key points more difficult. The electrical impedance analysis method has many advantages in practical analysis. This study was used to monitor the drying process of calcium alginate capsules. The determination conditions of the electrical impedance analysis method were determined, and the changes of the electrical impedance characteristics during several drying processes were measured and analyzed
