可可豆壳棕色素毒性试验及其安全评价

对可可豆壳中提炼出的天然色素进行了一系列毒性研究。在所有实验取得阴性结果的基础上,对该色素进行了安全评价。结果表明,最高剂量组大鼠平均每天摄入的色素量为1.129 mg/kg bw至1.378 mg/kg bw,各项观察指标与对照组无显著差别(P>0.05)。棕色素一般每公斤食品添加0.5~0.8 g,如果一个体重25公斤的儿童每天吃250g这种食品,则将摄入5~8 mg/kg bw棕色素。现最高剂量组两性大鼠摄入的色素超过人体摄入量的140倍以上,未发现毒作用。根据色素的全部毒性试验结果,未出现急、慢性毒性。我们认为,该棕色素作为食品添加剂是安全的,在食品加工中是一种比较经济和有发展前途的食用天然色素。 A series of toxicity studies have been conducted on natural pigments extracted from cocoa shells. Based on the negative results obtained in all experiments, the pigment was evaluated for safety. The results showed that the average daily intake of pigment in the highest dose group was 1.129 mg / kg bw to 1.378 mg / kg bw, and there was no significant difference between the observation group and the control group (P> 0.05). Brown pigment generally add 0.5 ~ 0.8 g per kg of food, if a child weighing 25 kg eat 250g of this food a day, it will consume 5 ~ 8 mg / kg bw brown pigment. Now the highest dose of amphoteric rats intake of more than 140 times the body’s intake of pigment, no toxic effects were found. According to all the toxic dye test results, no acute and chronic toxicity. In our opinion, this brown pigment is safe as a food additive and is a more economical and promising edible natural pigment in food processing.
