以“圆脆”鲜枣为试材,对拮抗酵母菌(美极梅奇酵母菌)在其表面的定殖情况进行了研究。结果表明:高的接种浓度(108 cfu/mL)、贮藏环境中高的相对湿度(RH 95%~100%)更利于美极梅奇酵母菌在“圆脆”表面的定殖,其在25℃时定殖能力强于在5℃时;接种病原菌对美极梅奇酵母菌定殖能力有一定影响,特别是在接种病菌24h后再接种美极梅奇酵母菌,其定殖能力显著下降;增效因子能提高美极梅奇酵母菌的定殖能力,尤其是0.2%(w/v)的丙酸钙能显著增强美极梅奇酵母菌在“圆脆”表面定殖能力。
